Noma: Ex-Staff Allege Abuse at Top Restaurant

Dozens of former employees have accused René Redzepi, the chef behind the acclaimed Noma restaurant, of abusive behavior, including verbal and physical assault. The allegations surfaced days before Noma’s highly anticipated and expensive, pop-up opens in Los Angeles this week.

According to reports, former staff members claim they were subjected to insults, physical violence, and pricked with kitchen utensils. One former head of the restaurant’s fermentation lab began sharing allegations on social media, which led to the creation of a digital archive of complaints, Noma-abuse.com. The website states that, as of now, no one within Noma has been held accountable for Redzepi’s alleged behavior.

Redzepi, a global authority on fine dining, fermentation, and foraging, apologized for his conduct in a 2018 documentary, acknowledging issues with the work culture at the five-time “World’s Best Restaurant.” The allegations are particularly striking given Noma’s reputation and influence within the culinary world, and reach as the restaurant prepares to launch its $1,500-per-ticket pop-up in Silver Lake on Wednesday.

The chef responded to the resurfaced allegations on Saturday, stating the restaurant has reformed. Though, a former employee is organizing a protest in Los Angeles ahead of the pop-up’s opening, as reported by the Los Angeles Times.
