Restaurant Automation: Jim Block on System Gastronomy & Robots

Facing persistent labor shortages and rising operational costs, the restaurant industry is increasingly exploring automation as a solution, a trend once relegated to science fiction.According to industry veteran Sven freystatzky, CEO of the German burger chain Jim-Block, this shift isn’t about eliminating chefs, but rather about leveraging technology to ensure consistent quality and efficiency in a sector reliant on standardized processes. The discussion comes amid a broader wave of investment in food service robotics, with global spending in the sector projected to reach $7.3 billion by 2027 .

What was once viewed as a dystopian prediction – the widespread replacement of chefs with machines – is now gaining traction within the restaurant industry, according to Sven Freystatzky, a veteran hospitality executive.

Freystatzky, currently CEO of the burger chain Jim-Block, believes that the increasing reliance on standardized systems in the food service sector is driving this shift. “Because good gastronomy depends more than ever on functioning systems – and system gastronomy ensures consistent quality,” the 56-year-old explained. He is also involved with Good Bytz, a startup focused on kitchen robotics.

The growing acceptance of automation comes as the restaurant industry faces ongoing challenges related to labor costs and consistency. Prior to taking the helm at Jim-Block, Freystatzky held a leadership role at nTellerrand Consulting, a hospitality consultancy founded by Tim Mälzer and Patrick Rüther, following the sale of his stake in the Burgerlich burger chain. He oversaw the firm’s strategic direction and growth for a year and a half.

Since 2021, Freystatzky has focused on digitalization and automation initiatives at Jim-Block. He argues that system gastronomy offers more than just fast food, and maintains a strong appreciation for fine dining establishments. He suggests a reevaluation of perceptions surrounding robotics is necessary.
