Amsterdam’s Two-Michelin-Starred Spectrum to Close its Doors in May
Chef Sidney Schutte’s acclaimed restaurant, Spectrum, located within the Waldorf Astoria Amsterdam, will be closing at the conclude of May 2026. The news marks a significant shift in Amsterdam’s fine dining scene, as the restaurant currently holds two Michelin stars.
Spectrum, led by Chef Schutte and restaurant manager Cas Kratz, has been recognized for its dynamic approach to modern European cuisine and its celebration of Dutch heritage. The restaurant evolved from Librije’s Zusje Amsterdam, with Schutte elevating the cuisine to earn two Michelin stars and a score of 18 Gault&Millau points within seven months of taking the helm. As of 2018, Lekker magazine ranked Spectrum sixth in the Netherlands.
“We don’t have to travel abroad for the best and most beautiful products, we have it all right here!” Schutte stated on the restaurant’s website. “Everything we need is around us: North Sea fishermen who bring in fresh fish every day and our well known Dutch farmers with generations of expertise. I’m always so thrilled to notice what wonderful ingredients they come up with this season. This represents exactly the thing that inspires me to get to work and create amazing new things with my incredible team.”
Schutte’s culinary journey extends beyond Amsterdam. Since December 2016, he has similarly led the kitchen at Cocina de Autor, a restaurant at the Grand Velas Los Cabos Hotel in Cabo San Lucas, Mexico, where he aims to create a fusion of European, Asian, and South American flavors. In 2017, Cocina de Autor was named one of “The Best New Restaurants” by CNN. He also operates Goldfinch Brasserie, opened in February 2015.
The closure of Spectrum will result in Amsterdam losing two Michelin stars, highlighting the restaurant’s importance within the city’s culinary landscape. According to reports, a new concept is planned for the space within the Waldorf Astoria Amsterdam.
Born in Middelburg, The Netherlands in 1976, Schutte honed his skills under renowned chefs at Restaurant Der Bloasbalg, Restaurant Scholteshof, and De Librije before establishing his own distinct style. The news of Spectrum’s closure comes as the restaurant industry continues to evolve, with chefs and restaurateurs constantly seeking new ways to innovate and engage diners.
