“After four weeks, the rabbits in the E group presented significantly lower weight, plasma cholesterol, LDL, triglycerides, and aortic cholesterol than those in the H group,” the scientists explained. These findings suggest a potential link between eggplant consumption and improved lipid profiles.
They added: “In hypercholesterolemic rabbits, eggplant juice significantly reduced weight, plasma cholesterol levels, aortic cholesterol content, and concentrations of MDA in native oxidized LDL and in the arterial wall, and increased endothelium-dependent relaxations.”
