Peruvian chicken chain Tori is planning a significant expansion throughout Lima and beyond, building on a model that successfully navigated pandemic restrictions with “dark kitchens.” The company aims to convert those kitchen-only locations into full-service restaurants, add at least three new locations in the greater Lima area next year, and is even eyeing potential international expansion into markets like the United states and Europe while concurrently growing distribution of its popular MT sauce line [[1]].

The company aims to bring the Tori experience to more customers and solidify its position as a leading brand in the country’s competitive grilled chicken market.

Tori is focusing its growth strategy in Lima on strengthening its physical presence. The brand currently operates a restaurant in Miraflores – offering both dine-in and delivery service – and two delivery-only “dark kitchens” in Magdalena and San Borja. However, the company plans to convert these dark kitchens into full-service restaurants by 2026. The first conversion will take place in Magdalena, with construction already underway and an anticipated opening between February and March 2026. “We are working to transform the Magdalena dark kitchen into a physical store,” said César Choy, a partner at Tori.

The company will then move forward with a similar conversion in San Borja, a district Tori considers a priority. With these changes, Tori expects to begin the new year with two fully operational restaurants, while continuing to offer delivery service in areas where it remains popular. “I believe we should have it ready by February or March, allowing us to start the year with two physical stores,” Choy explained.

In addition to these conversions, Tori plans to add at least three more locations next year. The company is evaluating districts including San Miguel, Breña, and the Lima city center, believing its business model can adapt to various locations. “It will depend on where we find the right space, because we believe Tori can thrive in any district,” Choy said.

Futura expansión a provincias y al extranjero

Looking ahead, Tori aims to expand beyond Lima, bringing its concept to other regions of Peru. While a specific timeline hasn’t been set, the company is evaluating cities with strong potential for both culinary appeal and logistical operations. “Cusco, Arequipa, and Ica are good provincial options,” César Choy noted, identifying the first markets under consideration for expansion. This move reflects the growing demand for Peruvian cuisine nationwide.

Interest in Tori extends internationally as well. According to Choy, several individuals and groups have approached the company to explore bringing the brand to international markets. “Argentina, Colombia, the United States – in Miami, a few people are interested. Europe too, Madrid,” he revealed. This international interest is driven by the brand’s growing recognition and its ambition to become a leading Peruvian grilled chicken brand on the global stage. “The idea is for Tori to become the strongest chicken restaurant, even outside the country,” Choy stated.

MT Sauce Line Driving Growth

Beyond the restaurant expansion, Tori is also focused on growing MT, its own line of sauces that originated during the pandemic and is now sold in supermarkets and within its restaurants. “Our chili sauce, mayonnaise, and vinaigrette are all from that brand. They are two brands that were born together, one supporting the other,” explained César Choy. MT is currently available in Wong and Metro supermarkets, gaining traction in the local market. “The sauces have gradually become more well-known,” he added.

The brand recently made its first export to the United States, with MT products entering Fresh Market less than a month ago, and is already preparing to expand in the region. “The next step for the sauces is also Chile, possibly Colombia, and to cover more of the domestic market,” Choy previewed. For 2026, the brand plans a key strategic change: its sauces will transition from refrigerated to ambient temperature, allowing for broader exports without logistical restrictions. “That will change a lot, we will be able to export much more,” he assured.

Menu Updates and New Culinary Offerings

Tori is also strengthening its culinary offerings to adapt to different consumption channels. One of the most recent launches is broaster chicken, which is currently being tested through delivery only from the Miraflores location. “I started a delivery service for the broaster chicken yesterday, currently only from the Miraflores location, and the other two locations will be added in a couple of weeks,” César Choy detailed, anticipating that this addition will help revitalize the offer and attract new customer profiles.

Additionally, the brand is preparing a menu update to coincide with the opening of its new physical location in Magdalena, allowing more people to access products that are currently only available for dine-in customers. “We want people to have the opportunity to sit at a table and eat our products, because we have several things that are not available for delivery and are only available in the restaurant,” Choy explained. In this way, Tori seeks to reinforce the in-person experience as part of its strategy to strengthen the brand and increase foot traffic.

The Tori chicken restaurant currently operates at three locations in Lima:
