Chef Flynn McGarry Opens New Restaurant, Cove, in Hudson Square
Chef Flynn McGarry launched his latest culinary venture, Cove, today in New York City’s Hudson Square neighborhood, bringing a unique blend of East Coast ingredients and West Coast techniques to the city’s dining scene.
Located at 299 West Houston Street, near Hudson Street, the 70-seat restaurant offers two distinct dining experiences: an a la carte menu in the main dining room and a set eight-course tasting menu in a private room. McGarry, who gained recognition for his innovative approach to fine dining as a teenager with his previous restaurant Gem, is known for his vegetable-forward dishes, many sourced from a garden he manages on Isabella Rossellini’s Long Island farm. Standout a la carte options include golden beets with wakame, roses, and smoked dates, and marinated tomatoes with grapes, ajo blanco, and fried thyme.
The tasting menu, priced at $210 per person, features dishes like fluke cured with cherry leaves and Jonah crab custard with egg yolk and shiso. McGarry’s commitment to wine is also evident at Cove, with a menu boasting 400 selections, primarily from French and American producers, available by the glass or bottle, or as part of a pairing program. This focus on beverage programs has been a hallmark of McGarry’s previous restaurants, including Gem. The restaurant’s wine list emphasizes “low intervention” wines, exploring the historical connections between winemakers and generations. For diners interested in learning more about the origins of wine, resources like the Wine Folly website offer detailed information.
The opening of Cove continues McGarry’s trend of redefining the New York dining experience through ingredient-focused menus and immersive dining environments, potentially influencing future culinary trends in the city. Restaurant officials stated they anticipate strong demand and encourage reservations.
